- 100 ml cold water
- 100 ml boiling water
- 1 cup (220 g) caster sugar
- 1 †cinnamon stick
- 100 ml freshly brewed coffee

- Remove from heat, then carefully add 100ml boiling water. Return pan to heat and cook for 1-2 minutes until caramel dissolves. Add coffee, stir to combine, then add oranges and add reserved orange rind to the pan. Simmer for 15 minutes, then remove oranges and place in glass bowls. 
- Increase heat to medium-high and reduce sauce for 2-3 minutes until syrupy. 
 
 Pour coffee syrup over oranges. Cool, then refrigerate until ready to serve. ̢۬Top with pistachios, almonds and serve with ice cream / whipped cream / Greek yogurt.
